Benoit Doussot, ein junger Winzer, präsentiert seit 2015 seinen Champagner Clandestin. Er kauft ausschliesslich Bio-Trauben von der Côte des Bar, um non-dosierte und sehr geschmackvolle Champagner zu kreieren. Seine Cuvées sind präzise, rein und mineralisch.
Austral ist ein grosser Blanc de Noirs (100 % Pinot Noir) aus lehm- und kalkhaltigen, nach Süden ausgerichteten Parzellen der Côte des Bar.

The alter ego of Boréal is the NV Brut Nature Les Semblables (Austral), derived from south-facing vineyards and, in this case, from the 2019 vintage. Delivering aromas of pear, crisp stone fruit, clear honey and freshly baked bread, it's medium to full-bodied, broad and pillowy, with a richer, more vinous personality and a long, saline finish. Of course, as I remarked to Doussot, the two alter egos would surely make an extremely complementary blend, even if that would fly in the face of the maison's Burgundian philosophy. - WK 08/2023
