The 2019 Extra Brut Blanc de Blancs Millésimé was picked entirely in Cuis and spent five years on lees. A lovely smokiness appears first, followed by wax, lemon and fresh pastry. The palate is crunchy, svelte and bright, with exquisitely fine mousse. The svelte body offers cooling, chalky depth and brings a salty hinterland. The finish is beautifully long and fresh. Dosage is 3 grams per liter.
