Die Cuvée Rubis von Vilmart ist eine Hommage an den Genuss. Eine Assemblage aus 90 % Pinot Noir (davon 15 % Rotwein) und 10 % Chardonnay, die als Premier Cru klassifiziert sind. Im Einklang mit seinen Zertifizierungen Viticulture Durable (VDC) und Haute Valeur Environnementale (HVE) kultiviert das Haus Vilmart seine Weinberge mit grösstem Respekt für sein Terroir. Elemente der Vinifizierung: Manuelle Ernte 2019, Vins de Réserve 2017/2018, 10-monatige Reifung in Eichenfässern, ohne malolaktische Gärung, Alkoholgehalt: 9 g/l.
Dieser Wein entwickelt in der Nase intensive Aromen von roten Früchten. Am Gaumen ist der Auftakt der roten Früchte vorherrschend und wird durch die Frische der rosa Grapefruit unterstützt. Ein zarter Duft von Melone und Weinbergpfirsich belebt unsere Papillen während der Verkostung. Das Ensemble lässt uns einen Wein von grosser Frische entdecken, der vollmundig und sehr ausgewogen ist.

Generous and expressive, the latest rendition of Vilmart's NV Brut Premier Cru Cuvée Rubis is showing very well, bursting with aromas of red berries, plums, blood orange and dried flowers. Medium to full-bodied, fleshy and enveloping, with a sapid core of fruit, a pillowy mousse and a lively, delicately phenolic finish, it's already drinking well. In the NV Brut Rosé Cuvée Rubis readers will find one of the most elegant, nuanced Rosés in the market. Light and gracious, yet also wonderfully deep, the Rubis has so much to offer. Red berry fruit, crushed rocks, rose petal, mint and white pepper are some of the many notes that pulse through this vivid, taut Champagne.
