Der Chablis Les Clos von William Fèvre ist der grösste und berühmteste der Grand Cru der Appellation. Das nach Süden ausgerichtete Terroir mit einem Boden aus sehr weissem, dichtem und tiefem Lehm ruht auf einer 80 cm hohen Kalksteinverdichtung, die für die typischen würzigen Noten sorgt.

The 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. It has a powerful bouquet with hints of white flower permeating the citrus fruit and apple blossom aromas. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. The vineyard was largely planted by William Fèvre’s father in the decade after the war. The 2021 Les Clos was made with 40% wood, but has recently been racked and assembled, so not clear. This is relatively classical with the effortlessly superior bouquet of Les Clos. A softer rounder style of fruit here. Additional intensity though behind, with a deep white fruit, liquorice and still some youthful bitters to complete. Drink from 2028-2036. Tasted: June 2022.Degustation
